        Dough hydration is the ratio of total water weight to total flour weight in a recipe, expressed as a baker's percentage. At 65% hydration, the dough contains 65 grams of water for every 100 grams of flour. This single number is the most important variable in bread baking — it determines the dough's handling characteristics, final crumb structure, crust texture, and oven spring behavior.

        In baker's percentages, flour is always defined as 100%, and every other ingredient is expressed relative to it.
